Silver Dollar Egg Sandwiches

Ingredients
4 eggs
1/4 c. milk
1/4 tsp. salt
dash pepper
2 tsp. butter
16 silver dollar-size Protein Packed Pancakes, warm
maple syrup

Directions:

1. Beat eggs, milk, salt and pepper in medium bowl until blended.

2. Heat butter in large nonstick skillet over medium heat until hot. Pour in egg mixture. As eggs begin to set, gently pull the eggs across the pan with an inverted turner, forming large soft curds. Continue cooking-pulling, lifting and folding eggs-until thickened and no visible liquid egg remains. Do not stir constantly.

3. Spoon eggs onto 8 pancakes, dividing evenly. Cover with remaining pancakes; serve with maple syrup for dipping.

Protein Packed Pancakes:

* 6 eggs

* 1 c. ricotta cheese

* 1/2 c. all-purpose flour

* 2 Tbsp.melted butter or vegetable oil

* 3/4 tsp. baking powder

* 1/2 tsp. salt

* 1/2 tsp. vanilla

1. Beat eggs, cheese, flour, oil, baking powder, salt and vanilla in large bowl until blended.

2. Heat lightly greased large nonstick skillet or griddle over medium heat until hot. Spoon 1/4 c. portion of batter (1Tbsp. for silver dollar size) into skillet; Cook until golden brown, turning once.
